Hot Chicken Coming Soon!

Hello out there, my name is Brett Smith, although most people call me Smitty. I will be the Chef/Partner at the upcoming Post Brewing Company in Lafayette. I am so excited to be part of the team that will be bringing the concept of chicken and beer to East Boulder County. It is an honor and a privilege for us to be operating out of the former VFW building on Emma Street. We are looking forward to being part of the community and helping to grow a vibrant downtown in Lafayette.

As I mentioned, our concept at The Post is “chicken and beer”. I like to think of our cuisine as Colorado Comfort Food. This is food cooked with the love of your grandma and the skill of trained chefs. Our menu mainstays will be fried chicken, rotisserie chicken and many delicious seasonal sides. You’ll see mac and cheese, fresh baked biscuits, collard greens, slaw, buttermilk waffles, lots of styles of potatoes and all of the fresh seasonal veggies from my friends at Isabelle Farm in Lafayette that I can get my hands on. Also coming off the rotisserie will be slow roasted prime rib and crispy pork shoulder. For our friends looking for something lighter, there will be fish, salads and lots of vegetables. My cooking philosophy is fresh, seasonal, simple and delicious. By sourcing the highest quality meat, seafood, poultry and vegetables we are able to let their natural flavors shine through.

I will be joining the Post team after a 5 year run as the Executive Chef at Zolo Grill in Boulder. It has been fun being in Boulder but as a resident of Erie, it will be great to be working a little closer to home. It will be my pleasure getting to know the folks in Lafayette. I look forward to serving you p some home cooking and hospitality!
